why does text which has been converted to curves/paths "thicken" when written to a PDF?  This is a problem in particular with digital print jobs - doesn't seem to be the same with offset print jobs?...

You can also use Print Production > Convert Color. You choose a grayscale profile in the Conversion Attributes section. Works equally well.
