And this is the root of the problem. Separations is greyed out. It's not an option. I'm trying to figure out why.
I unplugged my Epson printer and restarted the computer. When I hit Print in Acrobat, the dialog box appears and the "Printer" is set as "EPSON Espon Stylus NX510". In the drop down menu to select the printer, it is the only thing in the list. So when I hit "Advanced" the Printer listed is the Epson. "Composite" is the only option. If I change the "Settings" to "Acrobat default", the "Printer" does not change.
This is why I'm confused. I put the PPDs in the correct folders and Illustrator and InDesign see them and let me print to them. Now, again, I don't WANT to use the PostScript>PDF>EPS workflow, but OS X has taken away my ability to print directly to PDF.
Since you seem to have the option to choose Separations in Advanced, what is listed in the "Printer" box?

I just tested this on my home PC with CS 5.5.... works perfectly. I saved the Illustrator file to PDF, opened the PDF in Acrobat, selected "Adobe PDF" as the printer, clicked "Advanced" and Separations is an option. This is a Mac thing stemming from the inability to Print to Adobe PDFs post-OS X 10.6.
But, on the Mac, since Illustrator and InDesign can see the PostScript printer PPDs, WHY CAN'T ACROBAT!?!?!
