Acrobat Pro 7 simply does not support 64-bit Windows 7 in terms of the special Adobe PDF PostScript printer driver instance. The first version of Acrobat that supported any 64-bit version of Windows for creating PDF in this manner is Acrobat 8.1. Looks like it is time for you to upgrade. Current version is Acrobat 11!
